Quickie post!! This very non-traditional taco was fun to make and eat. Fun to me is using left overs. Throwing away food makes me cry. And I guess I will fold just about any food scraps into a corn tortilla and call it a taco. But this one was good. Really. Build like this:
corn tortilla
a spread of store bought baba ganoush (hummus works too)
prepared quinoa
baked sweet potato
arugula
sriracha

That's an usual combination, but it looks good to me too. It's great finding tasty ways to use leftovers - win/win!

ReplyDeleteI love that you've been cooking with quinoa so much... I love quinoa, but I don't make it often enough. Also, I really love winter squash and sweet potatoes in mexican food - it's such a great combo. These tacos look great!
