Vegan MoFo #9: Taco Tuesday!! Sweet Potato & Quinoa


Quickie post!!   This very non-traditional taco was fun to make and eat.  Fun to me is using left overs.  Throwing away food makes me cry.  And I guess I will fold just about any food scraps into a corn tortilla and call it a taco.  But this one was good.  Really.  Build like this:

corn tortilla
a spread of store bought baba ganoush (hummus works too)
prepared quinoa
baked sweet potato
arugula
sriracha

  5. I love that you've been cooking with quinoa so much... I love quinoa, but I don't make it often enough. Also, I really love winter squash and sweet potatoes in mexican food - it's such a great combo. These tacos look great!
