Healthy Vegan Friday: Spirulina Blueberry Smoothie
Happy Friday! Today's post is a smoothie recipe for Healthy Vegan Friday. Healthy Vegan Fridays is a recipe link up hosted by Carrie at Carrie On Vegan and Gabby at The Veggie Nook. While I was doing some shopping at my neighborhood food coop last week I treated myself to a jar of my favorite spirulina. I'm not sure why I let my pantry sit void of this for so long. I really love adding it to smoothies. In case you don't know, spirulina is a complete source of protein with 4.8 grams per tablespoon. And when I have it in the house all of my smoothies are greenish black in color. Not very pretty, but super tasty. Here's the smoothie I've been having this week:
Spirulina Blueberry Smoothie
2 handfuls spinach
2 cups frozen wild blueberries
1 banana
2 tablespoons almond butter or sunflower seed butter
2-3 cups almond milk + more for blending if needed
2 tablespoons spirulina
Blend up in high speed blender until smooth. Add more almond milk or water as needed to get desired consistency. This makes a lot of smoothie and I share it with my boyfriend, so cut the recipe in half for one person or put the leftovers in jars in the fridge for later.
Also, that cute kitten cup was a gift from my boyfriend. He picked it up at our favorite Asian grocery store. They have the cutest collection of cat stuff there. But I also think it's fitting to drink the spirulina smoothies from my zombie mug.
Any big plans this weekend? I'll be doing homework and sticking close to home because I'm on call for work until Monday morning. Also, it's cold here and sort of trying to snow this morning. I plan on curling up with books and hot chai tea. See you next week!

OMG that mug! I can't! It's too freaking cute! Love the kittie :) I haven't experimented too much with spirulina because it scares me a little but this smoothie sounds great! It may be a great way to dip my toe in the water ;)
ReplyDeleteI've had my eye on that mug for a few months, but already have a big mug collection so I held out. Then my sweet bf shows up with it last week. He didn't even know that I had been wanting it!
DeleteI think spirulina is delicious, but I've heard that different brands have different tastes. I love the HealthForce brand. And I don't get paid anything to say that ;). I can't even taste it when mixed in with the berries.
I'm a new follower to your blog and I LOVE it! This looks awesome, too! I have done one with Blueberry, Spirulina, and Almond Milk but I think I will add the Nut Butter next time :)

DeleteI should definitely try some spirulina since I'm a huge smoothie lover! Does it add any flavor or is it pretty neutral?
ReplyDeleteIt does have a mild flavor. I think it's sort of cheesey, but it really depends on the brand. Mixed with berries and nut butter the taste pretty much disappears. It's delicious on popcorn and I like it on pasta too.

DeleteI left my blender AND spirulina at the old apartment and I am pretty pissed. Hopefully that will change soon. Once warmer weather comes, for sure. Smoothies are so, so perfect.
ReplyDeleteYes, I kind of had to force myself to start having them again because all I want when it's cold is a hot beverage. But they make me feel better, so I've made them a morning habit again.

Oh spirulina. I have a hard time with the taste. BUT I have this green powder (a mix of spirulina, wheatgrass, chlorella and barley grass) and it's very delicious, totally takes the edge off. And I need to pick up some blueberries!

DeleteHi, just reading this post and had to declare my love for Amazing Grass. I LOVE that stuff! Every green and nutrient ever in it. I like the "orange dreamcicle", has a nice citrus flavor- great in smoothies or just alone with ice water

DeleteI am actually on a "smoothie fast" (which is a ridiculous way of putting it, since I'm consuming lots of protein, fat, grains, in addition flooding my body with greens and fruits), and I happened across this recipe (thanks to Carrie On Vegan). I happened to have all the ingredients on hand, and I just made it! It's SO GOOD! I'm enjoying it as I type this! Thank you!!
