Reflections On 2012

Happy Monday!  I decided to start this week with a more personal post.  I've been loving all the "year in review" and "new year goals" posts and decided to jump on board.  2012 was a pretty good year for me.  So, focusing on the positive, here are some highlights: 

Eat To The Beet was born.  I wanted a space that reflected my personality and love of vegan and gluten free foods.  This is always a work in progress but I am so happy that I get to hang out here and check in with all of my super awesome blog friends.

Travel.  In 2012 I visited Wisconsin, Austin, San Diego, and Kentucky.  One trip was to visit family, one for school, and two for music.  It was a great year for travel.

Grad school.  I finally decided to follow my dream (almost life-long) and get moving on the path to becoming a nurse practitioner.  I think I started thinking of this as my dream job when I was 17 or 18 years old.  I finished my first term with straight A's and have felt nothing but excitement about this undertaking.  My ultimate dream is work in health promotion.  My ideas are still pretty broad, but will narrow as I move through my program and gain experience.  

Healthy inspiration.  I started reading books by Dr. Joel Fuhrman, Natalia Rose, and  Kimberly Snyder.  I worked on increasing the amount of greens in my diet and noticed how much better I felt when I did.  I became more interested in cutting back on processed v/gf food and increasing whole foods and fresh fruits and veggies. Oh yeah, I got crazy about green juice.

 

Ditched the gluten.  And felt a lot better.  Found out there is celiac disease in my family and learned through some experimentation that gluten and my gut do not have a happy relationship.  Sorry gluten, I've moved on.  And I've learned how to make delicious gluten free donuts and gravy.  So, I'm good to go.  2013:  get tested for celiac.

 My first half marathon.  Ran this with my mom.  It was super fun and a little painful.  The course was through very hilly vineyards.  We had some good wine afterwards, so that was nice.

A lot of love.  Family, friends, my cats, and the best for last: my awesome boyfriend that has shared all of these experiences with me, gone gluten free for "solidarity", taste tested a million experimental kitchen creations, traveled, explored, encouraged, and has a love for furry creatures that melts my heart daily.  
What a year.  I'm so excited to see what 2013 brings.  And I'll save that for the next post where I plan on making a list of ideas, goals, and hopes for the new year.  Hope your week is off to a great start.  For me, school starts today!

  2. Awww what an amazing year! I'm so glad that you have followed your dreams and started grad school (very successful first semester I may add!) and that you feel inspired and refreshed :) It's a bummer that gluten has been identified as a problem but really great that you've pinpointed it and have been able to move on and create amazing gluten free dishes :) I'm definitely going to be looking to you for green juice inspiration as I embark on my ACD adventure. I think lemons and limes will save me.

    A half marathon is a huge accomplishment and how wonderful you got to share the experience with your mom! You are definitely surrounded by people who love you and I wish you an even more amazing 2013!! It's so nice to have you back!

  4. You definitely had a year of incredible accomplishments! Congratulations on the excellent grades and half-marathon success. I will take an order of donuts and a green juice now. Please. Happy 2013!!!

  5. Oh yeah, I forgot you started this domain not too long ago! Congrats on all your accomplishments in 2012, and I am also a big green juice nerd. :) Wishing you an awesome 2013!
