The Spring 2013 Healthy Vegan Challenge starts today. I'm not really doing anything different than I already have been, but the challenge has me committed to continuing to eat healthful, whole foods through the Spring. To be more specific, I will be closely following Dr. Joel Fuhrman's Eat To Live and Super Immunity recommendations. Dr. Fuhrman's eating style just happens to make me feel awesome. You should do whatever makes you feel your best. Healthy lifestyle is not one size fits all, so figure out what works for you and do it. And tell me about it in a comment. I'm always interested in hearing what works best for other people.
So, knowing that the challenge was starting today, I enjoyed some ramen at Boke Bowl over the weekend.
They have a few gluten free and vegan options on the menu. I decided to have the ramen made with yam noodles and caramelized fennel broth with pea shoots, shiitake mushrooms, eggplant, and water chestnuts. It was delicious! I added some sriracha-style hot sauce and Japanese pepper that was on the table because I like lots of spice, but the broth was rich and flavorful on it's own.
Yum. Boke Bowl ramen really hit the spot. I'll definitely be going back for more.

Oh man, that bowl looks AMAZING! I'm such a sucker for a good soup/bowl of ramen. That one looks perfect and the fact that it's gluten free is that much better!
ReplyDeleteI'm starting my raw "challenge" tomorrow with a one day green juice cleanse then a little over a month of all raw foods. My main motivation is health of course but spring approaching is also in the back of my mind ;) It's a rebirth after all! I'm wading my way through tons of information on different diets and whatnot and figured that an all raw cleanse/elimination diet is the way to go. After my rheumatologist essentially gave up on me I figured it's time to take it into my own hands so lets see how it works! I will definitely be looking to your for meal inspiration :)

ReplyDeleteFor food discoveries, I realized I can make curry at home and have it taste great...I followed the recipe from the most recent VegNews issue (though I used store bought curry paste). I haven't decided to embark on any new challenges, just the usual eat healthy and exercise.
Can't wait to see more posts about your challenge.

ReplyDeletemy healthy habit for the spring is to go back to balance. after doing 80/10/10, i'm finding i need to focus more on getting balance over an extreme approach. joel fuhrman's approach looks right up my alley!
