Healthy Vegan Friday: Dijon Tahini Kale Salad, Spring 2013 Healty Vegan Challenge, & I Win!

I was excited to hear from Gabby that my Spiced Chocolate Chia Pudding post from last week is a featured recipe on The Veggie Nook this week!

Today's submission is a giant kale salad that I had for dinner one night this week.  I switched up my tahini dressing a little by adding dijon mustard.  It was pretty-pretty good and went well with the cherry tomatoes, black beans, yellow and orange bell peppers, and green onion.  


Dijon Tahini Kale Salad
  • 2 tablespoons tahini
  • 2 tablespoons dijon
  • 2 tablespoons rice vinegar or lemon juice or apple cider vinegar
  • 2 tablespoons nutritional yeast
  • a splash of Bragg's Liquid Aminos

Whisk all ingredients together and massage into a head of washed curly kale.  Top with whatever you like:  quinoa, black rice, sweet potato, beans, veggies, pumpkin seeds... anything goes.

On Wednesday I mentioned that I would be posting about a health challenge that I'm participating in.  The Spring 2013 Healthy Vegan Challenge is happening over at Carrie On Vegan.  If you're interested in starting some healthy habits, take a look.  I'm going to continue with the healthy habits I've been working on the past few weeks.  My inspiration is Dr. Joel Fuhrman's Eat To Live plan.  Here are the specific healthy habits I'll be focusing on:

  • Eat a lot of greens, fresh veggies, and fresh fruit
  • Start each day with a green smooa large bottle of Natural Vitality NutraRev! and a 3.7 oz container of Cherry Calmthie
  • Add plenty of G-BOMBS to my meals:  greens, beans, onions, mushrooms, berries, and seeds
  • Eat real, whole food / Stay away from processed stuff
  • Exercise 3 times a week
  • Follow the Eat To Live guidelines
I've already been following the plan for three weeks, and I feel really great.  So, I look forward to continuing.

Any plans for the weekend?  Aside from the usual study-fest going on at my house, I'll be visiting Comic Con.  I'm pretty excited to escape from the books for a few hours a day and have some fun.  Happy Friday to all of you!  See you next week.

    The Healthy Vegan Challenge indeed sounds healthy. I love the concept of G-BOMBS, and I need to add more of the second B (berries) to my diet so let me look into that soon... ;-)

  2. Your salad is gorgeous and thanks for the dressing idea! I'll definitely have to try that! I love all of your health goals. i think I may have to use them as inspiration for myself throughout this raw cleanse/diet that I'm doing. I'm especially into the natural foods which is probably clear if I'm going to be eating raw :)

  3. great goals. i have a few myself that i've been serious about, similar to yours. i've had to cut out coffee again (due to an IC flare-up), but i'm trying to look at it as adding new herbal teas to my mornings.=)

    it's been such a challenge getting good quality produce around here. i went to my local health food store yesterday and everything was close to rotting. very frustrating! i'm growing lettuce in my basement under a grow light but it's still got some time before harvesting. also, i started alfalfa sprouts. like you, i'm trying to get as many greens in as i can.

    1. Thanks, Kelli! I have become crazed about herbal tea. I have almost an entire shelf in my pantry dedicated to it.

      Interesting about growing lettuce & sprouts in your basement! Let me know how they turn out.

  7. Great idea to add the mustard! I often rely on a tahini/lemon/nooch combo, but I think the mustard would be such a nice twist! Yay!

  8. We all win when you share healthy, tasty recipes like this. I am still unsure about the no-oil thing but otherwise on board with Fuhrman's recommendations. I love it when a great weekend of cooking lets me know it will be a delicious week. :)
