Smoothies, Tea, & Big Bowls Of Veg

Today is kind of a Monday-Funday for me because I'm finally not on call for work (after putting in 85 hours of stand-by last week), and I have the day off!  Even though I'll be spending most of the day on homework, I'll be doing it in a pair of pajamas on the couch, hopefully with cats cuddled up nearby.  I don't know how others feel about this, but when I know my pager could beep any second and I'll have to run off to work, it's hard to start a project, work on homework, or concentrate on much of anything.  So I usually putz around the house, read non-school books, and spend a lot of time on the internet.  So, today I will celebrate being able to really dive into and finish some projects for school.

I've been drinking A LOT of smoothies lately.  I crave them and they make me feel great.  And even though they may not look like it, they're all very green.  My usual smoothie greens are kale and spinach.  Those taste the best to me.  The one shown above was a special treat, but still packed full of nutrients.

Raspberry Chocolate Green Smoothie

Mix in a high speed blender until smooth:
  • 1 frozen banana
  • 1 cup frozen raspberriess
  • 2 cups unsweetened vanilla almond milk
  • 1 tablespoon cacao
  • 1 tablespoon maca
  • 1-2 giant handfuls of greens (I used a mixture of spinach and kale)
This smoothie felt like dessert, but I had it for lunch.  The chocolate raspberry combination is a favorite of mine.

Dinner has been big bowls of veg.  This bowl was extra special because my sweet boyfriend made soy curls and mushrooms in tomato sauce.  You can't see all of it, but the bowl included mixed greens, broccoli, broccolini, wild rice, quinoa, and the soy curls.  Very satisfying.

I'm continuing my tea binge, and even though I usually drink herbal or green tea with no milk, I couldn't resist trying the extra spicy chai at the juice cart in my neighborhood.  The fresh ginger and cayenne make it really spicy.  They made it with steamed almond milk in my cuppow jar and it was perfect.

These are the things that have been keeping me fueled lately.  Smoothies, greens, veggies, fruits, and tea.  I feel so good that I'm going to stick with it and see what happens.  I'm finding that the less processed stuff I have in my diet, the better I feel.  And with Spring just around the corner, it's the perfect time to do a little internal cleansing and get ready to feel great when the warm weather arrives.  Anyone else have Spring on the brain?  I do try to enjoy the moment and be grateful for the way things are right now, but I can't help but daydream about sunshine and spending a little more time outside.

Happy Monday to you all.  See you in a few days.

  1. Yep, I definitely have spring on my mind and just ordered a couple of dresses because I will need something new to wear when the weather turns more pleasant!
I've also been thinking about lightening my meals to feel good in my skin when spring finally arrives :)

  3. Happy day off! I'm the same way. I can't work on anything if my day is broken up. I need a full, long stretch of time in order to be productive.

    Yummy looking veggie bowl!

  6. Aww yay, so glad you got to enjoy a day off (even if it included studying). Your meals look simple and delicious and satisfying. The smoothie sounds soooooo good and decadent (while still being virtuous) and that veggie bowl is beautiful. I'm so with you, I'm definitely filled with anticipation for the arrival of spring. I can't wait for the sunshine and warmth!

  7. I definitely have spring on the brain, the weather was warm here for a while and it was really nice. I'm also trying to move soon so I'm getting in the spring cleaning mood.
That IS a huuuge bowl of veggies, it sounds awesome. I love wild rice but I rarely think to eat it.
Glad yr diet is working so well for you. Do you ever give yrself sweet treats? Do you have a good recommendation for that? Since I gave up a lot of my usual treats for Lent, I've been lost on that point but craving something. It's usually been a sweet chai tea for dessert but something new might be nice.

    1. Yeah, I'm having nothing processed right now, so the sweet treats are herbal tea and those little mandarin oranges that they sell by the box. I have chai a lot too, with unsweetened vanilla almond milk, which helps a little in the sweets department.

  8. Thanks for the smoothie recipe! I've been having Fuhrman Eat your greens fruit smoothie for several weeks and I love it. Eating based on the eat to live way is such an adventure because I'm finding recipes that call for ingredients that I have never, ever heard of. I'll have to look for this maca that you speak of.
