Super Delicious Veggie Bowl With Tahini Tamari Sauce

In an effort to bump up my energy levels I've been focusing on nutrient dense foods.  This isn't much different from what I usually eat, except I am also avoiding the processed stuff.  My smoothie cup overflows, and my salad bowl is heaping with greens, grains, beans, veggies, and tempting sauces.  I like this kind of food, and I end up feeling better, so it's not that hard to say, "No, thanks!" to the faux cheese, sour cream, and baked goods that I usually partake in.  Even though I really do love the gray, dark, overcast weather of the Pacific NW, every year, at least once, my body gets all pouty about the lack of daylight.  This is usually when I decide to focus on the foods that make me feel best.


I love adding lightly steamed vegetables to my salads and bowls.  Broccoli, kale, and crimini mushrooms were my veggies du jour this time.


I started with a base of mixed salad greens with herbs, a scoop of quinoa, the steamed veggies, sliced green onion, and a tangy tahini tamari sauce.


I didn't get a picture after this, when I coated the whole bowl with nooch.  It was wonderful.  The sauce was just a tablespoon of tahini, a dash of tamari, and a squeeze of lemon juice mixed together with some water to thin it out.  I wasn't really measuring anything as I made it, but the combination was perfectly tart, creamy, and salty.

I'm in the middle of my work week, so it's pretty much work/sleep/work/sleep for the next few days.  I was wondering what you do when you start feeling like you're in a slump or low-energy?  What works for you?  Let me know in the comments.  I know we're all different and I like to hear about your experiences.

  2. What a beautiful dish! I was going to make a sauce like this for some black rice noodles I just picked up. Definitely going to have to try it.

    Sugar is always the first to go when I'm feeling really tired. I also try to up the greens... natural energy. I did a pretty hardcore cleanse a few year ago where I got rid of all added sugars (fruit was still ok) and grains. It was tough but I felt like it reset my system and I felt great. I'm going to be starting ACD diet soon and I'm hoping that will help with my energy as well.

    1. Ditching the sugar and processed foods has me feeling so much better and it's only been a few days. I'm keeping this up for a while :)

  4. Mmm, tahini-tamari is such a good combo. That bowl is absolutely beautiful - I need to get my ass to a grocery store and load up on greens. And the greyness is the main reason why I don't want to live on the west coast, despite how much I love it. And eating greens is pretty much my favorite way to de-slump! That and nutritious soups. Soups are so homey!

    1. Yes, tahini + tamari = something I can't get enough of. And the greyness of the NW definitely puts me in a slump now and then, but super healthy foods like soups, smoothies, and lots of greens usually pull me out of it. And a little fresh air/exercise helps too :)

  5. You know just by looking at it that that bowl is going to do you good. I know if I'm ever a bit rundown then the thing I crave is broccoli, broccoli and more broccoli. Although normally is broccoli with cheesy, so not entirely healthy!

  6. This bowl looks delicious Nikki! Loooove tahini and tamari, especially in sauces! Also steamed broccoli is my fav!

    Great idea avoiding all the "faux" stuff. It always seems like a good option but it really isn't any better for out bodies than the real stuff. And with dishes this tasty, who needs all those substitutes? :)
