Remember all the pancakes I've posted about from Harlow? Well, I decided to make my own.
|Lemon Thyme Sour Cream Pancakes with Blueberry Lemon Sauce|
Lemon Thyme Sour Cream Pancakes
1 cup all purpose gluten free flour mix (I use Bob's Red Mill)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon thyme
zest of one lemon
1/2 teaspoon salt
1/4 teaspoon xanthan gum
2/3 cup sugar
1 cup almond milk
1/3 cup vegan sour cream
1/4 cup coconut or canola oil
1 tablespoon vanilla
Whisk together dry ingredients, then add wet and stir until combined. Cook in an oiled pan over medium heat, about 2-3 minutes on each side.
Blueberry Lemon Sauce
2 cups blueberries
Juice of 1 small lemon
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons water
Combine the blueberries, lemon juice, and sugar in a small saucepan over medium heat. Cook until bubbly. Mix together the cornstarch and water with a fork until smooth. Drizzle the cornstarch mixture into the blueberry mixture, stirring constantly. Cook until thickened, about 5-10 minutes.
These would be good with maple syrup instead of the blueberry sauce, or even just sprinkled with some powdered sugar, if that's your thing. I thought the citrus, herb, and berry made them taste like summer. I had mine with a big mug of dark coffee.
I've been incorporating more getting-out-of-the-house-and-exercising into my daily routine. I took a few study breaks this week for trail running.
I'm lucky to have a few nice parks within running distance of my house. Thank you, Portland.
And, yes, I did go out to eat a few times. One of the best meals was at Vege Thai. We had our favorite salad rolls with peanut dipping sauce.

In other news, I'm approaching the middle of my fourth term of my Nurse Practitioner program (only 8 more to go!), and it's busy time with projects due and exams to take. But overall things are going well. I return to campus in Kentucky in two weeks to present my community health project. I'll tell you more about that in the near future.
