I have a lot to be grateful for, and I don't want to take the opportunities for granted just because things feel a little stressful right now. Here are some pics of things that have been good this past week:
Making food at home with vegetables from my parents' garden
Zucchini from a friend of a friend's garden made into zucch-quinoa scramble with shiitake miso gravy.
Making parfaits in jars with coconut yogurt, raw apple cinnamon buckwheat granola, strawberries, and bananas
The juice cart by my house makes these delicious acai bowls.
Chia + nectarines + vanilla almond milk
Veg tacos from Los Gorditos
Banana oatmeal pancakes from Harlow
Coconut cider and carrot-ginger juice from Harlow
A party that invites gnomes... ain't no party like a garden gnome party!
Long walks on dirt roads
wild blackberries... not quite ripe
driving home to visit my family
Coming up is my return to Kentucky to meet up with my cohort for school. You can see my post from last year's trip HERE. I'm more excited/less scared this time because I've become close with some of my classmates, and have a better idea of what to expect.
I'm still trying to post once a week, but if you want to hang out with me on instagram my account name is eattothebeet, I'm @nikki_walker on twitter, and the blog has a facebook page, too. I hang out daily on those sites, so we can spend more time together if you find me there :)
I hope you're having a great weekend!
